Countless guests who have stayed at the resort over the years have been asking (more like begging apparently!) for the recipes to take home, so the chef's at Absolute Sanctuary decided to create this recipe book.
The beautiful book is divided up into the following sections:

What is so good about this recipe book, apart from the relatively simple recipes, is that each recipe has a 'health description' of why this particular dish is good for you. The juice recipes explain how it helps with certain ailments and how high it is in certain nutrients. It's such a great idea, because if you are feeling under the weather, this book can help you to choose the right drinks and meals that may help you get better faster!
This book is beautifully presented with many brightly coloured pictures. I think a recipe book without lots of pictures is just simply not going to make you want to cook things so it's great that they have incorporated lots of enticing photos to get you in the mood to make healthy food. The book also makes me really want to visit the spa one day! They seem to really care about the food they serve, it's mostly organic too! So many spas these days try to come across as healthy yet they still serve pesticide laden foods!
If you love cooking healthy food, this cute recipe book will be a firm favorite. Nothing is too hard to make and sourcing the ingredients is pretty easy!

SANCTUARY SPRING ROLLS
2 dried shitake mushrooms
20 gm glass noodles
2 tablespoons virgin olive oil
¼ onion, minced
10 gm kale leaves, shredded
25 gm purple cabbage, shredded
25 gm white cabbage, shredded
20 gm straw mushrooms, finely sliced
1/2 carrot, grated
2 Chinese celery, chopped
¼ block firm tofu, diced
2 tablespoons low-sodium light soy sauce
1 tablespoon palm sugar syrup
2 tablespoons vegetable broth/stock
Pinch of pepper
4 sheets Vietnamese rice paper
4 strips of red bell pepper
DIPS
Plum sauce
Sweet and sour sauce
Vegetable-Noodle Filling
- Soften the dried mushrooms in water. Squeeze dry and julienne.
- Soak glass noodles in cold water until soft and transparent.
- Using a pair of scissors cut the glass noodles into lengths that match the shredded cabbages.
- Heat 1 ½ tablespoons oil in a non-stick pan.
- Add in the onion first to flavor the oil. When they turn transparent, add in the rest of the vegetables and tofu. Stir-fry for about 2 minutes
- Flavour with soy sauce and palm sugar syrup.
- Add glass noodles to the vegetables. Continue stir-frying for 1 minute
- Pour in the vegetable broth. Season with pepper and heat through.
- Dish is done when the glass noodles have absorbed all liquid.
- Divide the glass noodles and vegetables into 4 portions.
- Assembling Spring Rolls:
- Soften rice paper in water for about 30 seconds.
- Lay the rice paper on a clean dry surface.
- Spoon one portion of the noodle-vegetable mixture across the rice paper near the bottom edge.
- Flip the edge of the rice paper nearest to you over the stuffing to form a small fold. Place a piece of red pepper across the fold.
- Fold in the right and left sides of the rice paper to form a pouch/envelope.
- Roll the rice paper upwards until you reach the top.
- Brush paper roll with the remaining oil to give it a sheen.
- Steam assembled roll over boiling bubbling water for 3 minutes.
- Serve with a choice of two dips for added flavors.
